Notes du chef

Difficult to find an ice-free protein, lactic, without egg and gluten-free (the waffles cones, ice are generally wheat). Finally, here is a simple solution and gustativement creamy.
The advantage of this technique is the scent. It is quite possible to change the fragrance of the ice. You want an ice-cream to orange. No problem, take the equivalent of 2.5 dl of juice and make marmalade with 125g of sugar to jam.
